During the few weeks preceding my son’s birth, I made many dinners that were
easy to store in the freezer. This made it very easy for us to eat nutritiously,
while not having to worry about much more than throwing something in the oven or
microwave. Some examples of things I made included lasagna, meatloaf, chicken
casseroles, meatballs, and pizza. I also made a big batch of pancakes, french
toast, and waffles for breakfast. I labeled everything with directions so my
husband would know what to do while I was recuperating. Even now that my son is 10 months old, I find it easy to make extra for dinner, then freezing it for later use.
What a time-saver!
