What to Do with Leftover Veggies

If I find I have celery, green peppers, or other veggies in the fridge, that I don’t have an immediate use for, rather than let them go bad, I chop them up, put them in a ziplock freezer bag and pop them in the freezer. I have them on hand, already chopped up, when I’m cooking.
