My two kids love making cookies with me. A few years back I ran across a recipe
for peanut butter cookies I thought was too good to be true until I tired it. All
you need is 1 cup of peanut butter, 1 cup of sugar and 1 egg. Preheat your oven
at 350*. Mix the three ingredients together with a blender for a minute or two and
then form your cookies with a teaspoon. My son always likes to criss-cross them
with a fork after we put the cookie dough on the cookie sheets. I usually put foil on
my cookie sheets before I put the cookie on but this is optional. Space the cookie
about 2 inches apart . Bake cookies for 8 to 10 minutes. When you take them out
they will be soft so let them cool for 5 minutes on the cookie sheet before removing
them. This recipe makes about two-dozen cookies.
Here’s another tip to go along with any cookie recipe: instead of foil use waxed
paper on your cookie sheets and make the cookie dough as you normally would.
Form the cookies, then put them in the freezer for 2 hours. After that you can put the
frozen cookies in a zip lock bag and have homemade cookies any time you want.
Just add about 5 minutes to your cooking time. My kids take 3 or 4 cookies out of my
freezer and put them in the toaster oven for about 13 minutes and they love it and I
love the fact that there isn’t a big mess to clean up after.
