How to Keep Potatoes White After Peeling

Potatoes can be peeled and quartered hours in advance without turning black, by
adding a cap full of vinegar to the water. Make sure all of the potatoes are
completely submerged. When the time comes for them to cook, drain the vinegar
water, add fresh water, and salt. The potatoes are as white as though you had just
peeled them.
